Farming & Terroir: From forty year old bush vines Grenache and twenty five year old Mourvèdre vines from an isolated vineyard in a cooler valley in the Faugères appellation. Only mineral sulfur (from natural volcanic soils), copper (< 1KG / Ha. / Year) and compost are used in the vineyard. Ploughing and mulching with St. Chamond carterpilar to avoid soil compaction. Vineyard certified organic.

Winemaking: Early pick to retain natural acidity and have low alcohol. Hand-picked grapes packed in small 15 kg. harvest crates. Direct pressing of whole clusters with gentle settling in stainless steel tank for a two day cold stabilisation to clarify the must. Fermentation with native yeasts. Six months élevage on fine lees in stainless steel tank. Bottled unfined, unfiltered with minute sulfur added after FML and bottling. Made in the pure tradition of Provencal Rosé, a classic dry Rosé.
