"Clos Sauveplane"

Grapes: Mourvèdre and Syrah

Appellation: Faugères

Farming & Terroir: From isolated walled vineyards in 'Sauveplane' lieu-dit, a plateau at the eastern limit of the Faugères appellation. Twenty year old Mourvèdre (high density - 7,000 feet/Ha.) and forty year old Syrah. Only mineral sulfur (from natural volcanic soils), copper (< 1KG / Ha. / Year) and compost are used in the vineyard. Ploughing and mulching with St. Chamond caterpillar to avoid soil compaction. South-east facing. Vineyards certified organic.

Winemaking: Hand-picked grapes packed in small harvest crates. Grapes are processed by gravity in the cellar. Co-fermentation of the Mourvèdre and Syrah in a Foudre with varying degree of whole cluster fermentation to bring freshness. Gentle punch-downs and/or pumping over for phenolic extraction. Twelve month élevage in a foudre. Bottled unfined and unfiltered with minute sulfur added after FML and at bottling. 200 cases produced only in exceptional vintage.
